If you’ve been reading this blog you’re probably aware that Jenelle and I have made list of foods and experiences that we want to share with our daughter Josephine Martha in the brief window of opportunity we will have with her. Turns out I actually missed one of them in my original post…and it is just about my favorite breakfast food…
Pancakes.
Our weekend schedule was a little off this week. We attended mass on Saturday evening so we could wake up at 2:30 AM to watch the epic Collingwood/Essendon game live on Fox Soccer Plus HD. After the ‘Pies handled their opponent we re-hit the sack, finally waking around 9:30. I asked Jenelle if she wanted pancakes for brekky and, probably sensing how much I wanted to make them, she said sure.
I used the King Arthur Flour “Self-Rising Light and Fluffy Pancakes” recipe off their website. I’m giving this recipe high marks event though I thought the homemade buttermilk substitute they offer makes the batter a bit thick. So I ended up adding a splash of milk after the first batch.
We ate them along with a couple slices of turkey bacon in the lounge room. I had mine with a blueberry infused maple syrup from Maple Farms Infusions in Lake Placid, NY where Jenelle and I had our “First Honeymoon.” I thought it was quite good and would recommend them, thought they are a bit pricey. Jenelle ate her pancakes like she always has; sprinkled with granulated sugar and lemon juice. I tried them this time and it was like eating a lemon. I have no idea how she can eat them like that, but she does. In the end our little Joey at least tried both the Australian and American variety. Just like our Joey.
I wish I had taken a photo. I wish I had taken the time to better document the occasion, however common, I had. It was an item on the list and it should have been given it’s due. I’m going to try and remember to do that going forward. Every day is one day closer to the inevitable and these little triumphs, if you can call them that, are what is making it bearable.
